Barbecued Pork Ribs
Ingredients
For the ribs
  - 3.5 pound (1 slab) pork ribs
 
  - 1 tbsp salt
 
  - 1 tbsp pepper
 
  - 1 tbsp curshed red pepper
 
  - 2 cups white vinegar
 
For the barbecue sauce
  - 2 cups hot sauce
 
  - 2 cups tomato puree
 
  - 2 cups water
 
  - 1 tbsp crushed red pepper
 
  - 2 cups sugar (more or less to taste)
 
  - 1 stalk celery
 
  - 1 green pepper
 
  - 0.5 onion
 
  - 2 large lemons
 
Instructions
For the ribs
  - Rub ribs with a mixture of the salt, pepper, and red pepper.
  
 - Marinate ribs in vinegar overnight in refrigerator in a baking dish.
  
 - Bake in the same dish for 30 minutes at 450 F.
  
 - Transfer to a sheet pan and bake an additional 30 minutes at 350 F.
  
 - Serve with the sauce (see below) either spooned or poured on the ribs,
    or used as a dipping sauce.
 
For the barbecue sauce
  - Mix together the hot sauce, puree, and water in a large saucepan.
 
  - Add pepper flakes and sugar.
 
  - Chop the celery, green pepper, and onion finely.
 
  - Slice and squeeze the lemons.
 
  - Add lemon juice and vegetables to sauce.
 
  - Simmer (do not boil) for 30 minutes.
