Maple Dijon Chicken
Ingredients
- ½ cup maple syrup
- ¼ cup Dijon mustard
- 2 Tbsp. apple cider vinegar
- 2 tsp. soy sauce (lite or low-sodium works too)
- ½ tsp. kosher salt (you can substitute table salt)
- ½ tsp. freshly ground black pepper
- 3 sprigs fresh or 2 tsp. dried rosemary
- 8 chicken thighs bone in and with skin (but bonless skinless
works too)
Directions
- Preheat oven to 425 degrees.
- Mix the maple syrup, mustard, vinegar, soy sauce, salt,
pepper, and (if used) dried rosemary in a 9x13" glass dish.
- Pat thighs dry, cut off extra skin and fat, and add to dish,
turning thighs to coat
- If using fresh, cut rosemary in half and nestle around chicken.
(If using dried, you should have added it to the sauce
already.)
- Roast 30–40 minutes, basting the chicken once about
half way through the roasting.
