Latkes
Ingredients
  - 3-4 baking potatoes
 
  - 1 onion, minced
 
  - 2 eggs (for 4 potatoes)
 
  - 2-3 shakes of salt
 
  - 4 Tbsp sugar
 
  - 6 Tbsp flour
 
  - Oil (sufficient for frying)
 
Directions
  - Grate the potatoes into julienne-type strips.
 
  - Mix the minced onion, potatoes, eggs, salt, and sugar.
 
  - Add the flour slowly to the batter.  If the batter is still
    watery, add more.
 
  - Heat the oil to 425F.
 
  - Fry the latkes (about 1 large ladle each) until brown and
    crisp.
 
Serve with sugar, applesauce, honey, or jelly.
