Greek-style Shrimp with Feta and Oregano
Ingredients
  - 1 T. extra-virgin olive oil
 
  - 3 cloves garlic chopped
 
  - 1 pound shrimp, peeled and deveined
 
  - 2 T. fresh lemon juice (I use the frozen)
 
  - 1/4 cup loosely packed fresh oregano leaves chopped
 
  - 1/8 t. salt (optional)
 
  - 2 ounces feta cheese crumbled
 
Directions
  - heat oil in skillet
 
  - add garlic and cook 1 minute
 
  - add shrimp and cook 2 minutes, turn and cook 1 minute more
 
  - add juice and oregano and cook 1 minute
 
  - add salt and feta and toss
 
  - cheese will melt, but some pieces will remain
 
  - serve immediately.
 
Serve over rice, orzo, or pasta.  Serves 2-4 people, depending
on quantity of rice, orzo, or pasta used.
