(Scaled for four people)
(The real recipe calls for apple cider, cream of chicken soup, onion and garlic powders, and the chicken; mushrooms are optional. Measurements are approximate so feel free to experiment. I do every time I make it, as I think I've lost the recipe. Oh yeah, sometimes I use white wine instead of apple cider.)
Mix all ingredients except the chicken. Blend/mix/stir/puree. Not really puree, but hey this is fun, right?
Pour liquid over chicken (after putting the chicken in a shallow baking dish). Bake at 350F for 1.5-2 hours, or until chicken is done. (If in a hurry, bake 45-60 minutes at 400F. If starving, deal with the food poisoning and eat it raw. ;) )
Serve with rice or rice-a-roni (yellow!), possibly a salad. Maybe sauteed veggies.
Maybe grilled onions would work with this.... Hmmm....
