Squash
Ingredients
  - Acorn squash
 
  - Olive oil
 
  - Ground cinnamon
 
  - 2 tbsp. butter
 
  - 4 tbsp. brown sugar
 
  - Diced apple or pear
 
  - Dried cherries or cranberries
 
  - Maple syrup
 
Mise en place
  - Halve the acorn squash pole to pole.
 
  - Scoop out the seeds and either discard or reserve for baking off.
 
  - Dice the apple or pear.
 
Instructions
  - Brush the entire interior surface of the squash with olive oil.
 
  - Lightly sprinkle with ground cinnamon.
 
  - In the hollow of each half squash, put 1 tbsp. butter, 2
    tbsp. of brown sugar, and a glug of maple syrup.
 
  - Put the diced and dried fruits in the hollow of the squash.
 
  - Bake for 45 minutes at 400°F.
