Crispy Parmesan Potatoes
Ingredients
  - 2 tbsp. olive oil, plus more for drizzling
 
  - ½ cup finely grated parmesan (not stuff in the can)
 
  - ½ teaspoon each garlic powder, paprika, and black
    pepper. Can add other seasonings.
 
  - Redskin potatoes cut in half
 
Directions
  - Preheat oven to 400 F.
 
  - In a 9x13 inch glass baking dish drizzle the olive
    oil. Tip dish to spead oil over the bottom.
 
  - Mix cheese and spice mixture in a bowl and spread in the
    baking dish.
 
  - Firmly press potatoes cut side down into baking dish.
 
  - Drizzle the potatoes with oil or oil spray.
 
  - Bake 35–40 minutes until golden brown.
 
  - Let rest 5 minutes and remove potatoes from dish with a
    spatula.
 
  - Can serve with dipping sauce of ¾ cup sour cream or
    plain yogurt sprinkled with cut green onions or scallions, or
    serve as-is.
