Menu: La Folie
At the 1997 motss.con in
San Francisco, CA, Thursday evening (August 7th) a group of 43 of
us went to La Folie on Polk Street for dinner.  The meal was
fantastic; the menu was:
  - La Folie hors d'oeuvres — Cured salmon on wild
    fennel with dill oil
  
 - Soup — Lobster pistou, a soup of lobster meat,
    fresh diced vegetables, and toy box tomatoes in an unclarified
    shellfish broth
  
 - Fowl — Roast quail stuffed with foie gras, with
    a simple salad and wild mushrooms, served in natural juice with
    roast garlic
  
 - Wine — Chauteau de Y'quem Sauternes 1989
  
 - Entrée — The diner's choice of:
    
      - Roast veal chop, with braised baby artichokes and wild
        mushrooms in a madeira port sauce
      
 - Sauteed artic char with a summer salad of haricot verts,
        yellow waxbeans, asparagus, toy box tomatoes, and verjus
        vinaigrette
    
 
   - Dessert — Croquettes of guanaja chocolat, orange
    coulis with candied zest, and grand marinier ice cream
